Donc vous comprenez bien que cette chronique va constituer un vrai challenge pour moi. Mais voil\u00e0, je ne peux pas r\u00e9sister au plaisir de l&rsquo;\u00e9crire, car ici, au supermarch\u00e9, quand je passe devant le rayon aux 10000 sauces, je ressens comme un appel. Car au Texas, vous n&rsquo;achetez pas une b\u00eate sauce \u00e0 Barbecue. Vous vous offrez l&rsquo;Ouest Sauvage \u00e0 port\u00e9e de bouche. Ici, une simple cuiller de \u00ab\u00a0salsa\u00a0\u00bb vous emporte au pays de David Crockett et des beaux Cowboys solitaires avec leurs chevaux et leurs lassos. Le pays o\u00f9 on na\u00eet et qu&rsquo;on ne quitte pas. Le pays o\u00f9 si l&rsquo;on n&rsquo;est pas mort d&rsquo;un ulc\u00e8re \u00e0 l&rsquo;estomac (c&rsquo;est le feu de l&rsquo;enfer cette recette l\u00e0!) on profite tranquillement des douces soir\u00e9es d&rsquo;automne berc\u00e9 dans son rocking-chair. Et pourtant, qu&rsquo;importe le flacon pourvu qu&rsquo;on ait le piment&#8230; Chipotle, Jalapeno, Habanero, P\u00e9ri P\u00e9ri et toutes les autres vari\u00e9t\u00e9s, de la plus douce \u00e0 la plus \u00ab\u00a0hot\u00a0\u00bb s&rsquo;invitent en sauce dans votre assiette. Figurez-vous qu&rsquo;en 1912, Wilbur Scoville, un \u00e9minent pharmacologue, a cr\u00e9\u00e9 une \u00e9chelle sp\u00e9ciale pour mesurer le piquant. Oui, comme celle de Richter pour les tremblements de terre, mais celle l\u00e0 mesure le feu de votre gosier. Pour \u00e9tablir son classement, il pr\u00e9parait une solution de piment frais m\u00e9lang\u00e9 avec de l\u2019eau sucr\u00e9e. Cette solution devait \u00eatre test\u00e9e par cinq personnes (les pauvres): tant que la sensation de br\u00fblure subsistait, il en augmentait la dilution. Lorsque qu&rsquo;enfin elle disparaissait, la valeur de la dilution servait de mesure \u00e0 la force du piment. Donc, par exemple, si vous lisez \u00ab\u00a0Naga Jolokia\u00a0\u00bb sur l&rsquo;\u00e9tiquette, pr\u00e9voyez un extincteur.
